Coconut Rice Pudding with Candied Limes

Coconut rice pudding was the perfect warm, comforting bowl of goodness to start the new year, especially on a new year’s day with a sick household and low energy. We managed to fit in a game of scrabble at the kitchen table during the hour or so that the limes needed to simmer in the syrup to become candied. And while they are delicious, they added little to the creamy coconut rice pudding in my opinion.  A comforting bowl of creamy rice is practically perfect in every way, and the lime syrup and candied limes were a bit of overkill for me, but certainly added another level of flavor with the bitterness of the lime rinds and the sweet lime syrup complementing. I appreciate the way that many of Diana Henry’s recipes have multiple variations, and this page holds options for Citrus and spice rice pudding as well as a Rose and cardamom-scented rice pudding, which sounds like another contender for the year!
