The ultimate winter couscous

Dinner with a dear friend called for something delicious and vegan. The ultimate winter couscous to the rescue! I have been ogling this recipe since day one, and was pretty excited to make this couscous filled with winter vegetables, dried apricots, and garbanzo beans. The vegetables (carrots, parsnips, and squash) are roasted in the oven with star anise, cinnamon, ginger, and other spices – amazing smells ahoy- and then is mized with the chickpeas and dried fruit and some fresh cilantro and lemon-y goodness.  Perfection.
