Avocado, quinoa and fava bean salad

This was a Saturday lunch salad that B was skeptical about enjoying. It won her over and we both ended up loving it. Sadly, our version has no fava beans as they were nowhere to be found – not even frozen! I replaced them with edamame, though, and it was a perfectly acceptable substitution. Substitution #2 was regular radishes for breakfast radishes, which I have only seen at the farmers market and were not to be found at any of our local stores. Also not to be found was purple cress. I don’t know that I have ever seen purple cress, so I wasn’t very surprised about that. Despite all of the substitutions and missing cress, it was perfectly delicious – subtly flavored, rich with avocados, and tangy from the lemon supremes, it was a sleeper hit for sure!
