Green garlic and goat cheese omelet

Well, good morning, spring! A Sunday morning can always be improved by omelets, and this one, made with green garlic from the farmer’s market and goat cheese was pure deliciousness. I am back to dabbling in both the Ottolenghi and the Henry versions of Plenty. The farmer’s market has opened new doors to delicious produce, and Ottolenghi can’t contain it all! And Diana Henry proved her cookbook’s mettle with this easy and creamy-dreamy dish.
